Clearwater Lodge on the Pit River, northeastern California’s renowned fly fishing destination, seeks a head chef for the 2006 season, April 15th thru November 15th.

Clearwater is a magnificent seven bedroom Arts and Crafts lodge, completed in the 1920s. The Lodge compound also has three 2 bedroom cottages and a 6 single bedroom building attached to the lodge. Clearwater sits on 40 acres just west of Fall River Mills, a small community in eastern Shasta County. It is 5 hours north of San Francisco, 1.5 hours east of Redding, and 3 hours north of Reno/Tahoe.

We feed from 10 to 40 people per day, 7 days a week. The number of guests is known, the menus are fixed and the meals are planned well-ahead of time. The single dinner entrée is served family-style at several large dining tables. Meal times are 7:30AM for breakfast and 6PM for dinner. This allows us to take maximum advantage of prime fly fishing times each day. Lunches are sandwiches, fruit, cookies and drinks eaten from coolers while fishing.

The kitchen is a full commercial facility, with a six burner range, a 3 foot griddle, double oven, a 30 inch charbroiler, a deep fryer, and a single Wolf convection oven. There is a large walk-in cooler and a double door freezer. We have a high speed dishwasher and extensive commercial cookware. Lots of work surfaces. Lots of storage. An excellent wine selection.

Cooks only cook. Housekeepers do the pots and clean up the kitchen. Wholesale grocers deliver weekly. Occasional supplementary shopping is done in Redding and at the Safeway in Burney. Our previous head chef set her own menus and coordinated the entire food program. Her entrees includes pork loin, halibut, tri-tip, scallops, salmon, shrimps, various chicken breast preparations, all with fabulous sauces. Each meal included rice, pasta or potatoes, a couple of veggies and a big imaginative salad, plus homemade bread. Creative desserts are a big hit among our guests. All of the food is prepared from scratch, including the baking. The new chef will have a great deal of creative flexibility with their planning and preparation.

This is rural northeastern California. The principal communities are Burney and Fall River Mills. Most of our guest are from the San Francisco or L.A. areas. They enjoy good food and wine. We have developed an outstanding reputation for our food, as well as for the ambiance of the lodge and our guide staff. Clearwater has been regularly written up in the SF and L.A. newspapers, as well as in Sunset and the Sunday NY Times. Wineries hold tastings and special fly fishing events at Clearwater.

We anticipate that the head chef would work 5 days a week. We have a second chef who is available to cook the other 2 days. Wages are negotiable, based on skill and experience. We pay well and the tips, a part of every guest’s bill, are good. There is a very attractive apartment above the kitchen that may be available for the chef this season. Or we will help find housing locally: perhaps an apartment or a house in a nearby community. The other benefits include the opportunity to live and work in a beautiful setting, with great recreational opportunities. We will teach you to fly fish! This could become a regular seasonal position for the right person.
